Run a query that matches everything, then hit the Long Format button at the bottom.

If you're just trying to ensure a backup before upgrading, you're probably better doing a mysqldump of the database instead. (and make sure you back up the current Bugzilla web app code as well, so you can revert back to it if anything goes wrong)

I am in the process of upgrading my Bugzilla instance from 5.0.6 to 5.2 and wanted to export a copy of all bugs currently within Bugzilla in the Long Format version. Is there a way to accomplish this?
