You can reset the password on the shell without any mails:

> --make-admin=username at domain.com
> --reset-password=user at domain.com

Besides that, the important mail settings are stored in the file
"data/params.json" in the installation directory of Bugzilla by
default. Just search for "mail" and "smtp", depending on your
settings.
