Given that Ben has noted that exactly the system he suggests is in use
by a bug tracker which tracks bugs for some 250,000 projects[0], I think
that asserting such a system would be "unmanageable" is contradicted by
the evidence.
We might argue that we are not technically capable of building such a
system. But we can't argue that it would be unusable if we did.
Remember also that the fact that a "field" used tags on the back end
doesn't mean that the only permitted UI is a giant "tags" textbox. If
particular fields are particularly important, you can break them out in
the UI. E.g. one could certainly implement e.g. "OS" as a drop-down
listbox while still having it implemented on the back end using a tags
system.
