  You could as well stop using Bugzilla and use Excel instead.

Using labels for everything is unmanageable, and would make it very hard
to track bugs efficiently, especially when used in some complex queries.
You want a UI with less fields, but you are making bug tracking more
difficult, which makes the simpler UI useless.
