How do I change the text that goes out in Emails

Hi all,

In the emails that get sent out to people, how do I change the name of the
fields ?
For example, I want to change the Platform field to say Region and the
OS/Version field to say Account Manager. I have managed this throughout my
Bugzilla installation, but havnt worked out where to change the email
text's.....
